After more than two decades in the kitchen, Chef Kyle remains motivated by the changing seasons and the farm's natural cycles. "What keeps me inspired are the constant changes on the farm and within the seasons. We’re always looking ahead to what’s coming next," he shares. His approach to cooking mirrors the shifts in nature, constantly evolving with each harvest, keeping him and his team in tune with the land.

Chef Kyle Connaughton highlights the relationship between his culinary creations and fine wine when asked about the inspiration behind one of his signature dishes. "The flavors we achieve with aged Sonoma Wagyu beef cooked over an open fire pair beautifully with a complex vintage," he explains. "The depth of the sauce, the creaminess of kohlrabi, and the subtle sweetness of dried apple bring a distinct California flair—an updated take on classic flavors." It’s evident that the wine’s complexity plays a pivotal role in guiding the dish, creating a harmonious balance of rich textures and nuanced flavors.

When it comes to designing a dish, Chef Kyle draws inspiration from both the ingredients and the wine. "It can go both ways," he explains. "Sometimes, we’ll create a dish and then work with the Sommelier Team to find the perfect pairing, not just for the dish but for the progression of the entire menu. Other times, wine is brought to us, and we create a dish to complement it—a fun, creative way to develop new ideas." His collaborative process ensures that every dish is tailored to elevate the guest's experience, reflecting a deep connection between food and wine.

Living in wine country allows for a luxurious connection with the grapes and nature throughout the year. This organic synergy is present in Chef’s personal life and The Single Thread's culinary narrative, creating an authentic and excellent dining experience.

"Wine is life here for all of us," he says. "It’s incredible to follow the winemaking process year after year and then enjoy the result. We’re in tune with the grapes throughout the seasons, and it’s fascinating to taste how the weather and nature translate into the bottle." His passion for wine is personal, shaped by the environment that surrounds him.

For Chef Kyle, creating a moment is about crafting the perfect experience for the guest and adapting to the occasion. "We don’t just do what we do—we adjust based on what the guest is celebrating," he explains. Whether it’s a romantic dinner, a reunion of old friends, or a special celebration, he and his team shape every aspect of the meal to suit the occasion. "The goal is to create moments that feel meaningful and memorable."
